- 1 pound beef mince (80/20)
- 1 medium cauliflower, cut into florets
- 1 cup broccoli florets
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup spinach, chopped
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 1/2 cup heavy cream or cream cheese
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: Bacon bits, chopped nuts, avocado for topping
Instructions
- Preheat oven to 375°F (190°C). Grease a casserole dish.
- In a large skillet over medium-high heat, brown the beef mince. Drain off any excess grease. Season with salt, pepper, garlic powder, and onion powder.
- In the same skillet, add cauliflower, broccoli, bell pepper, and zucchini. Sauté until tender-crisp. Add spinach and cook until wilted.
- In a large bowl, combine the browned beef mince and sautéed vegetables. Stir in heavy cream or cream cheese to bind the mixture.
- Pour the mixture into the prepared casserole dish. Top with cheddar cheese, mozzarella cheese, and parmesan cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let it cool slightly before serving. Garnish with optional bacon bits, chopped nuts, or avocado.
Notes
- For a spicier casserole, add diced jalapeños or red pepper flakes.
- Use pre-shredded cheese for convenience.
- Prepare the casserole ahead of time and bake it when ready to eat.
