  • 1 medium cauliflower, cut into florets
  • 1 cup broccoli florets
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup spinach, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup heavy cream or cream cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: Bacon bits, chopped nuts, avocado for topping

Instructions

  1. Preheat oven to 375°F (190°C). Grease a casserole dish.
  2. In a large skillet over medium-high heat, brown the beef mince. Drain off any excess grease. Season with salt, pepper, garlic powder, and onion powder.
  3. In the same skillet, add cauliflower, broccoli, bell pepper, and zucchini. Sauté until tender-crisp. Add spinach and cook until wilted.
  4. In a large bowl, combine the browned beef mince and sautéed vegetables. Stir in heavy cream or cream cheese to bind the mixture.
  5. Pour the mixture into the prepared casserole dish. Top with cheddar cheese, mozzarella cheese, and parmesan cheese.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Let it cool slightly before serving. Garnish with optional bacon bits, chopped nuts, or avocado.
