  • 1 pound pasta (fettuccine, penne, or rigatoni)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Season the steak strips with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak and sear for 2-3 minutes per side. Remove from skillet and set aside.
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, sliced bell pepper, and sliced mushrooms. Cook until vegetables are tender, about 8-10 minutes.
  4. Pour the beef broth into the skillet and bring to a simmer. Cook for 2-3 minutes, allowing the sauce to slightly reduce. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy. Add the cooked pasta and steak to the skillet and toss to combine.
  5. Garnish with fresh parsley and serve immediately.
