Ingredients

Scale
  • For the Crust:
  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup cold shortening or lard
  • 68 tbsp ice water
  • 1 tsp turmeric powder (for color)
  • For the Filling:
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, finely chopped (adjust to taste)
  • 1 tbsp curry powder
  • 1 tsp thyme
  • 1/2 tsp allspice
  • 1/4 tsp ground ginger
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • 1/2 cup beef broth or water

Instructions

  1. Prepare the Crust: In a large mixing bowl, combine the flour, salt, and turmeric powder. Cut in the cold shortening using a pastry blender or food processor until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  2. Make the Filling: In a large skillet, brown the ground beef over medium-high heat. Drain any excess fat. Add the onion and garlic, and cook until softened. Stir in the scotch bonnet pepper, curry powder, thyme, allspice, and ginger. Season with salt and pepper. Add the breadcrumbs and beef broth or water, and simmer until the liquid is absorbed and the mixture is thickened.
  3. Assemble the Patties: Preheat your oven to 375Β°F (190Β°C). On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Use a round cutter or a bowl to cut out circles (about 4-5 inches in diameter). Place a spoonful of the beef filling onto one half of each circle. Fold the other half over to form a half-moon shape. Crimp the edges with a fork to seal.
  4. Bake: Place the assembled patties on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown. Let them cool slightly before serving. Enjoy your homemade beef patty!

Notes

  • Keep the Dough Cold: Cold dough is key to a flaky crust. Make sure to use ice water and refrigerate the dough as directed.
  • Spice It Right: Don’t be shy with the spices! The unique blend of curry powder, thyme, and allspice is what makes a Jamaican beef patty so distinctive.
  • Adjust the Heat: Scotch bonnet peppers can be very spicy. Adjust the amount to your preference, or use a milder pepper if you prefer.
  • Seal Well: Ensure the edges are properly sealed to prevent the filling from leaking out during baking.
