- 2 lbs beef chuck roast, cut into 1-inch cubes
- 2 tbsp olive oil

- 1 cup red wine (optional)
- 2 tbsp all-purpose flour
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1 bay leaf
- 1 cup frozen peas
- 1 cup frozen corn
- Salt and pepper to taste
- 1 box (14.1 oz) refrigerated pie crusts
- 1 egg, beaten (for egg wash)
Instructions
- Prepare the Beef and Vegetables: Cut the beef chuck roast into 1-inch cubes. Chop the onion, dice the carrots and celery. Mince the garlic.
- Sear the Beef: Heat olive oil in a large Dutch oven over medium-high heat. Season beef with salt and pepper. Sear in batches until browned on all sides. Remove and set aside.
- Sauté Vegetables and Create Gravy: Add onion, carrots, and celery to the pot. Sauté until softened (5-7 minutes). Add garlic, cook for 1 minute. Stir in flour and cook for 1-2 minutes. Gradually pour in beef broth and red wine (if using), stirring constantly. Add thyme, rosemary, and bay leaf. Bring to a simmer.
- Combine and Bake: Return beef to the pot. Cover and simmer for 2-2.5 hours, or until beef is fork-tender. Remove bay leaf. Stir in peas and corn. Preheat oven to 400°F (200°C). Pour mixture into a 9-inch pie dish. Top with pie crust, cut slits, and brush with beaten egg. Bake for 30-40 minutes, or until crust is golden brown and filling is bubbly. Let cool slightly before serving.
