Ingredients
Scale
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can of diced tomatoes, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Optional toppings: avocado, sour cream, salsa, jalapeños
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until it is browned. Drain off any excess grease.
- Add the chopped onion and bell pepper to the skillet with the browned ground beef. Cook until the vegetables are softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the can of diced tomatoes (undrained) along with the chili powder, cumin, and cayenne pepper (if using). Season with salt and pepper to taste. Stir well to combine. Bring the mixture to a simmer and let it cook for about 5-10 minutes, allowing the flavors to meld together.
- Reduce the heat to low and sprinkle the shredded cheddar cheese over the ground beef mixture. Cover the skillet and let it cook until the cheese is melted and bubbly, about 2-3 minutes. Serve hot, topped with your favorite keto-friendly toppings like avocado, sour cream, salsa, or jalapeños.
Notes
- For extra flavor, brown the ground beef with a tablespoon of Worcestershire sauce (check label for carb content).
- Add other keto-friendly vegetables like mushrooms, zucchini, or spinach.
- Spice it up with a dash of hot sauce or a pinch of red pepper flakes.
- Use different types of cheese such as Monterey Jack or pepper jack for a flavor twist.
- Serve over cauliflower rice or zucchini noodles for a complete and satisfying meal.
