Instructions

  1. Prepare the Beef: Lightly season shaved beef with salt and pepper. Marinate with low-sodium soy sauce or tamari and cornstarch.
  2. Chop Vegetables: Cut broccoli into florets, slice bell pepper and onion. Mince garlic and grate ginger.
  3. Stir-Fry Beef and Vegetables: Heat olive oil in a wok or large pan. Stir-fry beef until browned, then remove and set aside.
  4. Combine and Simmer: Add vegetables to the pan and stir-fry until tender-crisp. Add garlic and ginger, cook until fragrant. Return beef to the pan. Pour in a sauce made from soy sauce, honey, and sesame oil. Stir well and simmer until the sauce thickens slightly. Serve over quinoa, rice or noodles.
  5. For Quinoa Bowl: Cook quinoa. Sauté shaved beef with diced onions and bell peppers. Combine cooked quinoa, sautéed beef, and veggies. Drizzle with vinaigrette or lemon juice.
  6. For Lettuce Wraps: Cook shaved beef with diced water chestnuts, carrots, and mushrooms. Season with soy sauce, ginger, and garlic. Spoon mixture into lettuce cups and garnish.
